  • 1/4 cup diced cucumber

Instructions
 

Prepare the Sushi Rice

  • Rinse the sushi rice under cold water until the water runs clear to remove excess starch.
  • Cook the rice according to the package instructions or in a rice cooker for perfect results.
  • In a small bowl, mix rice vinegar, sugar, and salt until dissolved, then gently fold it into the cooked rice. Let the rice cool to room temperature.

Shape the Pizza Base

  • Line a pizza pan or baking sheet with parchment paper to prevent sticking.
  • Spread the seasoned sushi rice evenly into a circular pizza shape, about 1/2 inch thick. Use a spatula or your hands (dipped in water to prevent sticking).
  • Place the rice base in the refrigerator for 15–20 minutes to set.

  • Carefully layer thin slices of sushi-grade fish or your chosen alternative on the rice base.
  • Arrange avocado, cucumber, and nori strips artistically across the surface.
  • Drizzle spicy mayo and soy sauce over the pizza for added flavor.
