Ingredients
  

Protein & Fillings:

  • 1 lb chicken breast or thighs diced or shredded
  • 1 can 15 oz black or pinto beans, drained
  • 1 cup cooked rice white or brown

Veggies & Extras:

  • 1 bell pepper sliced
  • 1 onion diced
  • ½ cup shredded cheese optional

Spices & Sauces:

  • 1 tsp each: cumin chili powder, garlic powder
  • 2 tbsp salsa or hot sauce
  • 4 large flour or whole wheat tortillas

Instructions
 

Step 1: Cook the Chicken

  • Heat 1 tbsp oil in a skillet over medium heat.
  • Add chicken and spices. Cook for 6–8 minutes until fully cooked.

Step 2: Sauté Veggies

  • In the same skillet, add onions and bell peppers. Sauté for 3–4 minutes until tender.

Step 3: Assemble Burritos

  • Warm tortillas for 10 seconds in the microwave.
  • Layer rice, chicken, beans, veggies, and cheese in the center.
  • Fold sides inward, then roll tightly.

Step 4: Optional Crisping

  • Heat burritos in a dry skillet for 2 minutes per side for extra crunch.
